Directions
1. Prepare Brownie Bites: Preheat oven to 350 degrees F. Grease large cookie sheet. In cup, stir espresso powder into hot water until dissolved. Set aside.
2. In large bowl, combine cocoa, flours, baking powder, salt, and cinnamon. In medium bowl, whisk sugar, cottage cheese, honey, vanilla, egg white, and espresso mixture until mixed. With spoon, stir wet mixture into flour mixture, then with hand, press dough just until thoroughly blended.
3. With lightly greased hands, shape dough by heaping measuring teaspoons into 1-inch balls and place on prepared cookie sheet 2 inches apart; press to flatten slightly. Bake 7 to 8 minutes or until brownies have cracked slightly. Transfer to wire rack to cool. Repeat with remaining dough.
4. Prepare Frosting: In microwave-safe small bowl, heat chocolate and water in microwave oven on High 45 seconds; stir until smooth. Stir in vegetable oil spread, then confectioners’ sugar and vanilla. Cool frosting slightly. Dip top of each cookie in frosting. Set aside to allow frosting to dry. Store brownies in tightly covered container with waxed paper between layers at room temperature up to 3 days or in freezer up to 1 month. The brown rice flour might make them lighter in texture...just a side note!!!

A time to refect....

As I look back at the past month I find myself thinking about when my husband and I went bike shopping to look for Elaynna'a new RIDE.:O) I am filled with such joy and happiness for I felt like that little girl who got the perfect gift from Santa!! She has had the same bike for 6 years without complain mind you. Actually both our girls are so good about not complaining about not having the latest anything!!

Anyways, when we were at the store and found the perfect bike I was so full of excitment for I knew this is what she truly wanted for Christmas. Of course there are other items on the list of goodies that she will receive this Christmas. But, the joy that surrounds this bike and Ella's bike for that matter is one of pure thankfulness. I think about how God is the same way with us. There are times in our lives where he holds out so that we are so appreciative of what we have that when we get it, it is like Christmas for us and for God.

I can see him full of such excitment for our happiness. This is where it is all about. I am starting to see...after a very long road. That my God does not want to deprive me of life he just wants me to be full of Joy and thankfulness with every gift he gives me. I am so excited to celebrate the gift of life with my girls and my family and my friends. The greatest gift I have been given is the gift of eternal life from my Jesus. I cannot even comprehend the magnititude of what he has done for me? I just know that I celebrate this day for him!!

He truly is the reason for this season. I love giving the gift of love and joy and peace and patience and of tangible things for that is the gift Jesus has given to me. And who am I not give to others what has been given to me. I write this today for all my friends and family to let you know that you all matter!!! You matter to me and to the one's around you. You matter to the one above!!! If you are in a Holiday rut today always know that you are so blessed to have what you have in your life today. Even in the midst of hardship...he is there!

Be blessed my beautiful friends and family!!! Let today be the best Wednesday to date!!! Later I am going to be blogging a cookie recipe that I have been working on and some strategies on how to get your blood pumping before and after the holiday season!!! xoxoxo
